Eggs---their way
I have always loved the way Europeans (most but not all) make scrambled eggs. They are "soft"---almost runny but still fully cooked. Why it took so long for me to pursue the same results here I have no idea---but now I am on the road to correct my laziness.
This is a fine starting point. I think only a few tweaks might be in order to get to my goal. I have now collected any number of "methods" and am sure to find my perfect place in that group.
If dried out scrambled eggs are not your thing---give it a try
