A little more information on the leg of lamb:
It is Australian Lamb. US produced lamb is almost impossible to find, when I do find it it comes home with me
It was covered with EVOO, garlic powder, onion powder, dry mint, Italian Seasoning, Creole Seasoning, kosher salt and fresh ground pepper---I forgot rosemary and dry mustard
It sat on the counter for a couple hours to come to room temperature and absorb some of the seasoning. Then into the oven at 320F for 3 hours. Left to rest on the counter for about 20 minutes

I usually buy New Zealand lamb which is generally available at Sam's club at a very reasonable price.
